Anticipating Spring
Happy first day of March! Can you feel the changing temperatures? It’s a relief to see above freezing temperatures in our area (Zone 5b), which means we can start seeding our first crops in the nursery and begin working outside again. Thus far, we have started celery, kale, carrots, green beans, salad mix, spinach, and arugula. Over the next few weeks, we will start our Asian greens, tomatoes, peppers, eggplant, and other crops. It’s an amazing journey to see what comes forth from a tiny seed. Did you know that a single tomato plant can yield up to 30 lbs. of tomatoes?!
In addition to our work in the nursery, we have begun prepping our caterpillar tunnels for planting. We have added fresh compost to our beds, which provides a healthy dose of organic material and microbes to the soil. The addition of wood chips in our pathways provides a rich source of carbon for the soil and limits the growth of weeds. (Some say that a weed is a plant that is growing in the wrong place. Weeds are not necessarily bad and are actually an indication that the soil wants to support vegetation. We just prefer that they grow outside the garden!)

Since announcing the start of our CSA program this year, we have received a positive response from families throughout our area. (CSA stands for “community supported agriculture” in which members of the community purchase shares in our farm in exchange for a weekly box of produce.) Steak Shawarma Bowls
A few weeks ago, we tried the Steak Shawarma Bowl, a recipe by Tieghan Gerard found in her cookbook Half Baked Harvest. If you are looking for a meal with a lot of different textures, colors, and flavors, look no further than this! It features flank steak, sweet potato fries, quinoa, and a host of vegetables such as cucumbers, tomatoes, olives, kale, avocado, and arugula. Although there isn't a web-based recipe to share, she has a demonstration video of how to prepare it on Facebook and Instagram, and an excellent website (halfbakedharvest.com) with other recipes.
